For two weeks, our kitchen journeys through the ancient spice routes of Israel, Lebanon, Persia, Turkey, Oman, and Saudi Arabia — farm-sourced, seed-oil-free, and entirely from scratch.

Why the Middle East?

Every few weeks, Generations Bistro packs its knives and travels — not literally, but through flavor, technique, and the stories embedded in a cuisine. This September, we land in the Middle East: one of the world's oldest and most layered culinary traditions, built on spice, fire, slow time, and the radical generosity of the shared table.

The Middle East doesn't rush a meal. Four-hour lamb shawarma, ember-grilled octopus, muhammara-glazed pork chops — these are dishes meant to linger over. That philosophy mirrors everything we believe about dining at Generations. You're not here to eat and leave. You're here to stay a while.

Chef Lukas Lipburger spent months researching the spice traditions of seven countries — Israel, Lebanon, Turkey, Persia (Iran), Oman, Saudi Arabia, and the broader Levant — before building this menu. Every dish is grounded in authenticity and elevated through our farm-to-table sourcing standards.

The Spice Philosophy

Middle Eastern cuisine is built on spice — not heat, but depth. Saffron threads, smoky paprika, cumin, cardamom, and silk chili layer warmth into every dish without a drop of seed oil. At Generations, we source whole spices and grind them in-house, preserving the volatile oils that give each blend its character. Our grass-fed beef tallow and organic non-GMO coconut oil carry these spices into the food in a way that industrial seed oils simply cannot.

Featured Dishes

Slow-Cooked Lamb Shawarma

Four-hour lamb shoulder marinated in a blend of seven spices — cumin, coriander, cinnamon, allspice, black pepper, cardamom, and clove — served over saffron rice with house-made labneh and pickled turnips from our farm partners.

Kofta & Mezze Table

Spiced lamb kofta torpedoes over silky tahini, crisp falafel with cool labneh, muhammara (roasted red pepper and walnut dip), baba ganoush charred over open flame, and warm house-baked pita — a celebration of sharing and Levantine abundance.

Saffron-Braised Chicken

Free-range chicken braised low and slow in a saffron, preserved lemon, and green olive sauce. Served with herb-flecked couscous and a drizzle of cold-pressed olive oil. Gluten-free adaptable.

Muhammara-Glazed Pork Chop

Heritage-breed pork chop from our Wisconsin farm partners, glazed with muhammara — a Syrian roasted red pepper and walnut sauce — and finished over charcoal. Served with charred eggplant and pomegranate molasses.

Charred Eggplant & Tahini

Whole eggplant charred directly over flame until the skin blackens and the interior turns silky. Dressed with tahini, lemon, garlic, and fresh herbs. Vegan. Gluten-free. One of the most requested dishes on the menu.

Farm-to-Table, Middle Eastern Style

Every protein on this menu comes from a named Wisconsin farm partner. The lamb is grass-fed and pasture-raised. The chicken is free-range. The pork is heritage-breed. The vegetables — eggplant, peppers, herbs — come from our regional produce partners. We don't compromise our sourcing standards for any menu destination. The Middle East just happens to be one of the world's great cuisines for showcasing what clean, well-raised ingredients can do.

Dietary Accommodations

The September Middle East menu is approximately 85% gluten-free. Vegan options are available throughout — the mezze table, charred eggplant, herb-tossed fries, and several mains adapt beautifully. Any fried item can be prepared in organic, non-GMO coconut oil upon request. Please inform your server of any dietary needs — our kitchen is built to accommodate.
