Our primary frying fat is grass-fed beef tallow — chosen for its clean, delicate flavor and the crispness you can only achieve with traditional cooking fats. Tallow has been used in professional kitchens for centuries; we brought it back because it's simply better.

Organic Coconut Oil

For all plant-based preparations, we use certified organic coconut oil — a stable, minimally processed fat that performs beautifully at high heat without the oxidation risk of seed oils.

Every vegan and vegetarian dish at Generations is prepared with the same level of intention as everything else on our menu. The absence of seed oils is non-negotiable — regardless of the preparation.

Our kitchen is and always will be free of seed oils — because what we don't put in your food matters just as much as what we do.

Our wheat flour comes from Heartland Craft Grains in Lodi, Wisconsin — a mill dedicated to heritage and ancient grain varieties grown without synthetic inputs.
